Gnocchi, A Repurposing Recipe

2 cup leftover mashed potatoes

2 egg

2 pinch salt

2 cups all-purpose flour

  1. Mix all ingredients together. You might find it helpful to break up the mashed potatoes with a hand blender to remove clumps before mixing with the rest of the ingredients.

  2. Flour your counter/large plate to roll your dough onto.

  3. Use a knife to divide gnocchi dough into sections. Place one section of dough on the floured surface and use your hands to gently roll it into a roughly 1 inch thick rope. Dust with flour if it gets sticky.

  4. Use a knife to cut the rope of dough into 1" pieces. Transfer the cut gnocchi to a lightly floured plate and continue with the rest of the dough.

  5. Bring a large pot of salted water to boil.

  6. Add gnocchi one at a time. They will sink. Gently stir. Cook for 2-3 minutes until gnocchi float to the top. Drain & enjoy with a favorite sauce!

Serves 4-6.
